“Be Inspired” Seasonally by Rita Calvert
If you’re real lucky, it’s the season to take the good life to the beach! Start prepping — now. Put in the time well before for portables, unbreakables, beach chairs, blankets, cloths, clothes and of course, flip flops! In the food category, a delish and very creative large sandwich to tote and share has been designed by moi just for this event!
These are the carefree rules to live beachily-and don’t you ever forget it!
Toteable Sandwich Torte
This is as tasty as it gets, enticing and can even be made in advance for convenience. There is a “how-to” guide included. Trade out the smoked turkey for pork or roast beef, if you like. Of course you can vary the cheeses as well.
- 1 loaf Panini Slims, thin sandwich loaf
- 1/2 cup pesto sauce (purchased or homemade)
- Tender fresh lettuce leaves
- 1/2 pound sliced smoked turkey
- 1/2 pound fresh mozzarella cheese, thinly sliced
- 2 large red bell peppers, roasted, peeled and cut into strips and blotted dry
- 1 cup thinly sliced fresh radishes
- freshly cracked black pepper
Use a full top and bottom of bread plus a third top so you will have a top, middle and bottom pieces (see photo); toast. Place each piece of bread on a flat work surface and spread the top of each with pesto.
For the bottom slice, add a layer of lettuce, then the turkey and radishes. Sprinkle with cracked pepper. Place the middle bread layer on top. Layer that with more lettuce, mozzarella slices and then roasted peppers. Sprinkle with cracked pepper. Add the top layer and press gently.
To set the sandwich, wrap snuggly in freezer wrap paper, parchment or plastic wrap (see photo). Refrigerate for 1 hour or overnight.
When ready to serve, unwrap, place on a cutting surface and slice.
